What connects to this connector?

The gray wire from the three pin connector above ends like this near the firewall

Are the red and yellow connectors just power taps for various accessories? Are they powered differently, always hot or hot in run only?

The three pin and single connector look like the fog light switch and feed connections.

Yes the red and yellow are for accessories. The one with the blue/red wire #19 radio light and rally pac lights. The one with the black/red wire #140 is for your radio and seat belt warning light. So one is hot with your headlight switch and the other is hot when the ignition.
