I would say out, otherwise how can a judge see the carpet underneath. I judge may suspect you are hiding something. Just my .0275 worth.

It is up to you, but if your carpet looks good, leave the mats out so the judges can see. Usually floor mats don't look all that great, especially the driver's, and they could detract from the car. What I do with my coupe is leave the driver's mat in to protect the carpet and then remove it once the car is parked in place.
