I'm fixin to (that's Texan for "preparing to") have the C4 rebuilt and I was thinking about having them replace the U-joints "while they were in there!

I have a little clunking sound now when you drop it into gear and I figured it is probably partially the trans but changing the U joints can't hurt.

I had the rear end rebuilt about a year ago so I know it's tight.

Anything else I should have addressed while their at it?

SOunds ok to me.
U joints are cheap and easy, so might as well get it done, or do it yourself...they do wear out and if you don't how old they are, might as well put new ones in.
