When I had my top replaced I did not take the opportunity to also replace the weatherstrip (dumb) but I picked up a new set this weekend. It's on my '67 of course, and I can see that the side strips bolt right in and look simple. I'm concerned about the front "header" strip. This looks like it's under a retaining strip that may also hold the front of the top in place nice and tight. Can I change this out easily? Is there some type of adhesive involved here?

the retainer is held in by short phillips head screws and then the ends unattach like the back pieces, use a small 1/2 " socket. Works best if you put the top back about halfway.

Be sure to use 3M strip caulk inbetween the rubber and top/frame.

Also, The header weatherstrip/retainer does not usually hold the top tight,
it is just to hold the weatherstrip in place. The top is ususally tacked in place.
