What finish should the plate between the engine and the automatic transmission have on a 1968 302 ci ?

I reckon your talking about the shim, and its finish is just bare metal.

I just pulled my motor, a '68 302, and it was painted gray. I know nothing about the history of the motor so I'm not sure if it should be gray or not but it seemed like good paint so that makes me think it may be original.
