A few days ago the passenger side of my 351c started smoking ALOT. I traced the smoke to the wrapped header on the passanger side. The smoke is white and smells sweet. I initially thought it was a ruptured heater hose, but they are fine. Could it be burning oil, bad valve, cracked header, might the wrapping be burning? What may it be?

White smoke would indicate water..sweet smell anit-freeze. Id say you have a hose or freeze plug leak.

I had fiberglass-wrapped headers at one time. Anytime the car sat (outside unfortunately) it seemed to absorb moisture and the wrap would stink (sweet smelling) for a while when it was hot. Sometimes when I shutdown the engine there would be a bit of smoke trickling up. So some smell/smoke/steam is normal.

The downside is that my headers rotted out faster (IMO) because of that trapped moisture. I don't think I'd wrap my headers again unless I had some way to keep it absolutely moisture free.
