I have a 68 fastback that I would like to open track every now and then. However, it will be mostly street driven. I have 15x7 rims. What would be the best tire and size for what I want?

Well, the best would be an extra set of cheap wheels and some DOT race rubber. Maybe in a 16" size. If you have to compromise and run the same wheels for street and track then something along the lines of the Yokohama AVS ES100 is available in 15", get good reviews at the www.tirerack.com.
Not alot of choices in 15" tires these days.

I have had good results with Dunlop SP8000 Sports. They still make them in 15's, and they are a good high performance tire(NOT all season). I use them on open track days at Lime Rock on my BMW.
