Came out great, accolades all around. Wife claimed she liked it better than last year's as this year it tasted "less smoky". Wait, what?
The meat indeed had a slight pink tinge here and there but no big deal and you had to kind of look for it to see it.
Brother in law sloped in, snagged half an apple pie and slid back out again.

WOW! Nice work guys. I haven't worked up the nerve yet to try whole turkey. Done some turkey breasts with great results using a mix of apple/peach. Fall turkey season is right around the corner so I may knock a few birds down and try smoking one.

I didn't split the bird and it took longer than desired. Temp dropped while I making other dishes. Late dinner, but it came out awesome. As the saying goes, it's done when it's done. The breast even had a pretty fat smoke ring in it.

I like smoked, but I cheat.

I just drop the bird off at the local Barbeque Place, pay a small fee, and pick it up Wednesday PM, wrapped with a tub of sauce. Also get one Cajon Fried.
