The last few times I've run my car engine, it has not wanted to shut off when I turn the key off. It wants to continue running (or try and badly). The carb needs adjustment, but what should I try first? I replaced the carb several months ago, and I kitted it before and tuned it after installation. It ran fine up until recently. I don't drive the car everyday. At a minimum, I try to start it and let it run every week-end. Engine is 351C-2V with stock 2100 carb.

...make sure you bring it up to full operating temp. Running it cold is bad for the engine and exhaust due to moisture build-up that does not get a chance to evaporate.
 
Your idle speed may be too high. This will allow air/fuel mixture to flow past the partially open throttle plates. Check to see if carb linkage is hanging up on the fast idle cam or if the base idle is just too high.
If this is the case you need to "fatten up" the idle circuit a little to make it idle after you turn the idle stop screw down.
