Funny you should ask!
I have an AOD behind my 351C right now. I have had no problems, and my wallet THANKED me this week on the drive to CF4. If you go with an AOD, you can stay with your 3.00 gears, but I think you would probably be happier bumping it up to 3.25 or 3.50.
My mileage went from 17MPG on the road to CF3 to 20+MPG (depending on conditions and how much "sport driving" I did). There is a measurable mileage advantage to the AOD.
You are gonna need a flexplate, throttle valve cable, block plate w/ inspection cover, starter for an automatic, shifter linkage, driveshaft yoke (driveshaft could need a length change), and a dipstick and tube. I would also get new flexplate bolts since they are cheap and good insurance.
